Week Two

This week’s grocery list includes Carrots and Avocados.

Carrot Recipe (makes 3 servings)

2 cups peeled and diced carrot

Instructions:

In a small saucepot, bring five cups of water to a boil. Add carrot and boil until tender, about eight to ten minutes. Strain, reserving a few tablespoons of cooking liquid. Mash if soft or puree in a blender or food processor, adding cooking liquid as needed to achieve a smooth texture. 

For each serving, fold in 1 packet or 2 scoops of Lil Mixins.


Avocado (makes 3 servings)

2 ripe avocados, peeled and pitted

2 teaspoons lil mixins infant egg powder

Instructions:

In a small bowl, mash avocado. Fold in 1 packet or 2 scoops of Lil Mixins and mix thoroughly. Add a tsp of milk if needed.
