Week Eight

Another week, another chance to try fruits and veggies.

Pineapple (one serving)

Buy canned unsweetened pineapple. Fresh is great too if you can get it. 

Use a chef’s knife to mince the pineapple, or pulse in a food processor until just less than smooth. Use the water from the can, or add yogurt. Mix in 1 packet/ 2 scoops of Lil Mixins for each serving. 

Yellow Split Peas (makes 3 servings)

These beans cook easily on the stove top. Bring 1/2 cup peas and 1.5 cups water to boil. Lower heat to medium low, and cover. Cook for about 25 minutes or until the beans are very soft. Add a dash of salt, ½ teaspoon of turmeric, and 1 teaspoon cumin.  od 

Allow to cool, and scoop out the flesh. M
