Week Five
Apples and beets are a great sweet, savory balance. Eat together or alone.
Apples (makes 3 servings)
2 apples
In a small saucepot, bring four cups of water to a boil. Meanwhile, peel apples and chop into ½ inch pieces, discarding the core & seeds.
Add apples to water and boil covered until apple pieces are very soft. Mash or puree in a blender until it has an apple sauce texture. Fold in 1 packet/ 2 scoops of Lil Mixins for each serving.
Beets (makes 2-3 servings)
2-3 medium beets
Scrub beets, dry, and rub with butter or olive oil. Wrap each beet in tin foil OR place in to a container covered in foil. Bake at 450 degrees for 1 hour.
Remove from heat, vent and allow to cool. Remove skin from beets. Mash or puree with water. Fold in 1 packet or 2 scoops Lil Mixins to each serving. Serve with mashed apple if desired.
